
Khichudi is a hearty one-pot dish made with rice and lentils. It is truly the ultimate Bangladeshi comfort food on a rainy day (especially when paired with fried eggplants and deshi-style omlette). My instant pot version comes together in less than 15 minutes so you can enjoy this as a quick weeknight meal!
Ingredients:
- 2 tbsp ghee
- 1 cup rice
- 1 cup dal
- 3 cups of water
- 0.5 teaspoon turmeric
- 0.5 teaspoon chili powder
- 1/4 cup fried onion (you can also use regular onions, just make sure to saute in oil/ghee for 4-5 mins before adding the rice and dal)
Instructions:
- Thoroughly wash and rinse the dal and rice
- Select the saute option in your instant pot. Add ghee and fried onions.
- Mix in the rinsed rice and dal. Add salt, turmeric, and chili powder and saute for 2-3 minutes (this will ensure each individual rice and dal grain is flavored with the spices)
- Turn off saute mode and add water. Pressure cook for 8 mins.
- Garnish with fried onions, cilantro, and ghee (optional)
Note:
If you don’t have an instant pot, you can also make this in a rice cooker! Just mix all the ingredients together (skip the saute step) and cook it with the regular rice setting.
