
Bangladeshi alu bhaji is such a simple and comforting dish. It transforms the humble potato into a flavorful and addictive dish with minimal spices. Thinly sliced potatoes are fried golden with some turmeric, salt, and green chilies. My easy recipe with a quick hack comes together in under 15 minutes (no peeling and slicing of potatoes required)
Ingredients:
- 2 cups of frozen shredded hashbrown
- 1 medium white onion, chopped
- 1 teaspoon turmeric
- 1 teaspoon salt
- 4-5 green chilies
- 2 tbsp oil
Instructions:
- Heat oil in a pan and saute onions until translucent (4-5 mins) on medium high heat
- Add thawed shredded hashbrowns to the onions
- Add turmeric and salt. Mix well with the potatoes and saute for 2-3 minutes on medium high heat
- Lower the heat to medium/medium low and cover the potatoes with a lid. Let the potatoes cook covered for 5-6 minutes or until tender
- Add green chilies and saute for 2-3 more minutes
- Enjoy with atta ruti or porata!
