Bangladeshi alu bhaji is such a simple and comforting dish. It transforms the humble potato into a flavorful and addictive dish with minimal spices. Thinly sliced potatoes are fried golden with some turmeric, salt, and green chilies.  My easy recipe with a quick hack comes together in under 15 minutes (no peeling and slicing of potatoes required)

Ingredients:

  • 2 cups of frozen shredded hashbrown
  • 1 medium white onion, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 4-5 green chilies
  • 2 tbsp oil

Instructions:

  • Heat oil in a pan and saute onions until translucent (4-5 mins) on medium high heat
  • Add thawed shredded hashbrowns to the onions
  • Add turmeric and salt. Mix well with the potatoes and saute for 2-3 minutes on medium high heat
  • Lower the heat to medium/medium low and cover the potatoes with a lid. Let the potatoes cook covered for 5-6 minutes or until tender
  • Add green chilies and saute for 2-3 more minutes
  • Enjoy with atta ruti or porata!
